I don’t know about where you are, but here in Missouri, it seemed to jump from summer to winter pretty quickly this year! We went from temps in the 90s and probably got two or three days of autumn-like temperatures before we were hit with our first snow… already! While I prefer the slightly warmer temps, I thought this would make a great opportunity to share some of our family’s favorite cold-weather recipes! All of these have been Chickadee-Family approved, and have gained the honor of being on our “regular” list! (Links provided to the original recipes!)

Baked Crockpot Chicken
This is probably the oldest recipe on here that I’ve been using. It’s been a great standby for years for us. Herbs and spices can be interchanged per your tastes. This is just as good as those store-bought rotisserie chickens for not much more work.

Bulgogi – Cheater Korean Beef Bowl
This recipe introduced me to sesame oil. I hadn’t used it prior to this recipe. One day, a little bottle of it spilled in my cabinet– boy, is that stuff strong! Yummy though! Computer Guy asks often for this recipe. It’s awesome over rice made in the pressure cooker.

Cheeseburger Soup
Perfect for a cool autumn day! Garlic bread is a nice side. This is the recipe that ComputerGuy likes me to make for food days at his work… and he never brings home any leftovers!

Pasta Carbonara
Don’t make this recipe if you’re watching calories. There is so much yummy goodness in here, but it is definitely a splurge as far as that goes!

Pork Carnitas
Love carnitas on a warm flour tortilla topped with lots of cilantro and a dollop of sour cream. Pairs well with chips and salsa! But in this recipe, I usually put the carnitas in the broiler for a few minutes to crisp at the end instead of frying them.

Potato Soup
Hands down our favorite cold-weather soup. This version adds kale, and you know, that’s definitely a bonus!

Southern Ham and Beans
Another “old” recipe! I’ve been making this one for years! It goes wonderfully with homemade cornbread! (And bonus! Our favorite recipe for that is Corny Corn Bread!)

Wisconsin Cheese Soup
ComputerGuy and RocketBoy went on a short-term mission trip to Wisconsin a couple of years ago and came back raving about the Wisconsin Cheese Soup they had there. So, I found this recipe, and it’s been declared a passable facsimile of the real thing!

White Chicken Enchiladas
I was introduced to this recipe after one of those yummy homeschool group get-together pot-lucks. I love the green chiles in this recipe. (And I always add cilantro. I love cilantro!)

Zuppa Toscana
Just like at Olive Garden! You can make this recipe low-carb (and it’s just as good!) by substituting crumbled/chopped cauliflower for the potatoes. Yummy!
