Introductions & Salsa

Let me introduce myself real quick since I know you’re probably new here.  Then I’ll share my famous Salsa recipe.  (Well, famous around here anyway!) 😉

I’m a Homeschooling Mama.  That’s my current job title, along with Wife & Mom.  I’m trying to add Blogger too, but we’ll see how that goes.  I’ve got two sweet girls in elementary school, and a too-smart-for-his-own-good boy starting high school in the fall (2018) a year early.  We’ve been doing this homeschooling thing since day one, which has been a challenge and a blessing both.   My husband is Computer Guy.  We’ve been married for 17 years now.  We got married in 2000 on the hottest day of the summer.  We live out here in the Midwest, where the summers are crazy for their heat and humidity.  It was a beautiful day despite the heat though.  I want to get carried away writing about that day, but I think we can do a post about that later.  I love reading about wedding days!

My youngest kidlet tells me she’d like to be a veterinarian when she grows up.  She calls herself a “Fixer Girl.”  My older daughter has a love for dolphins and otters and puppy dogs, and wants to be an animal trainer someday.  She’s Ottergirl.  Our son has a love of space, aviation, and science, so he’s Rocketboy. One of the coolest things about getting to do school at home with my kidlets is getting to watch their interests grow and develop.  I love finding the curriculum that matches their learning styles and interests.  We’ll probably talk more about that in a later post as well.

I’m Chickadee, and outside of homeschooling, I love gardening and reading good books, and once upon a time I liked to paint.  I’d love to hear your book recommendations and gardening tips!  We try to put a garden in every year, but since we live in town we don’t have a lot of room to plant as much as I’d like.  Ottergirl took part in a gardening program this past summer through 4-H and brought home more tomatoes and peppers and yummy salsa fixings than I ever could have produced from my little garden.  It was our “Summer of Salsa!”  Soooo good!!  Makes me miss those warm summer days on this freezing cold winter one!    It was out of that summer abundance of fresh veggies that this recipe came to be.

Chickadee's Summer Salsa

Keep in mind, all these amounts are approximate… this Salsa is the ultimate yummy “throw everything together” recipe. It is really hard to mess it up!

Ingredients

  • 5-6 medium to large sized Fresh Garden Tomatoes
  • 1 large Onion Any type, but red is good!
  • Cilantro As much or little as your family prefers... we like lots!
  • 1/2 tsp Cumin
  • Dash Salt
  • Dash Black Pepper
  • Splash lime juice or lemon juice works too
  • 1 Seeded Jalepeno pepper Other peppers work well too. 1 Jalepenos makes a mild salsa, so add another if you like more heat!

Instructions

  1. If you like your salsa chunky (more like pico de gallo style) you can dice everything up by hand. If not, throw all ingredients into your food processor or blender and let it go until it’s your desired consistency.

    Spoon it into canning jars, and refrigerate overnight.  Best served cold.
